I’m finally back to the blogging world! To be honest, summer takes a bit of adjusting as far as schedules go. It’s the adjusting to having the kids back home all day and keeping them busy. As a mom, I think we often tend to let our own schedules just fall to the wayside. But it’s what I love, you know being a mom.
I also love summer! All the late nights, family gatherings, BBQ’s with friends and neighbors, sharing and eating good food. This Cobb salad recipe is just the right side to accompany any BBQ. The flavors are all so spot on and will appeal to just about anyone. The best thing about this salad is you can change up the ingredients to your liking.
I usually add chopped, grilled chicken to this salad but this was accompanying grilled chicken as the main dish, so I omitted it in this recipe. I also like to add kalamata olives every now and then, as well as switching out the gorgonzola cheese for feta or blue cheese. It’s always an absolute must to add the best bacon you can find though. It will make a huge difference! I love love thick cut Applewood smoked bacon. It’s simply just the best.
I use a blend of crisp romaine lettuce mixed with my favorite finely chopped kale. It adds such a nice variety than the usual romaine. The crunch of the lettuce mixed with the perfect red wine vinaigrette and the texture of all the ingredients, makes this summer cobb salad spot on amazing!
