I’ve been dying to share this recipe for quite some time now. I wanted to wait until the perfect time to share it and then I realized that today was that day because it’s National S’mores Day! Best day ever!! I can’t even begin to explain how much I love all things s’mores. Cookies, cakes, donuts, etc..For me, it’s the true sign of summer nights. Roasting marshmallows over a campfire until perfectly golden brown and placing it on top of a great piece of chocolate, sandwiched between two crispy graham crackers. Ooh, they’re so good!
So, of course I had to try and create a cupcake version of my favorite treat. I recipe tested so many different variations from a graham cracker cake, so many homemade marshmallow frostings, to a fudge filled core. I knew the components that I wanted, so I combined some of my favorite recipes to create this insanely good recipe.
These cupcakes might be one of the best cupcakes you’ll ever have. They have a perfectly crunchy graham cracker base, with a super moist-oh so good chocolate cupcake, then a layer of chocolate glaze and topped with a homemade, torched marshmallow frosting. It’s perfection. This is hands down, not only my favorite cupcake but my absolute favorite dessert. It has everything you want in a dessert. Come to think of it, I recently pulled through the Whole 30 food plan and the one dessert that I told myself I would have after I was done was this exact cupcake. Haha, I’m totally serious!
