Though it’s not technically “fall” yet, I think when the leaves start changing up in the mountains and there’s a crisp, cool breeze in the air, my mind goes straight into fall. Which of course means that you better believe pumpkin everything is happening here in my house. Yes it is.
I honestly can’t resist making everything when it comes to pumpkin. All the cookies, cakes, scones, pies, breads…just everything. But one of my favorite recipes that I have are these pumpkin cupcakes. About 8 years ago or so, one of my dearest friends brought me a cupcake similar to this one from a local bakery and I was surprised that it was actually pretty good. I’m super picky when it comes to baked goods from local bakeries, so of course after I had it I immediately wanted to re-create it and make it a little bit better. And so the recipe testing began.
I’m very particular when it comes to recipe testing and what I want my final result to be. If you’ve read through my blog before, you know that when it comes to testing recipes, I will test a recipe at least a dozen times until I feel I’ve reached perfection, to my standards anyway. When I’m testing pumpkin recipes, I feel like the recipe needs to have just the right blend of spices. I’m a firm believer in using good quality ingredients. Two of my all time favorite spices I like to use are Saigon cinnamon and freshly grated nutmeg. Ground nutmeg is fine but freshly grated is the best. For a pumpkin cake, I actually go way from my usual love of a more dense cake, to this one that has a moist, yet delicate crumb. But friends, there is one thing that sets this pumpkin cupcake apart from any others you may have had. Why? Because it’s filled with the probably the best pumpkin mousse you’ve ever had. So smooth, creamy and so light. You will literally find yourself uncontrollably eating it. Or maybe that’s just me. Oops.
This recipe may sound that it might be on the difficult side, but it honestly couldn’t be easier to make..Just read through the recipe and follow the instructions and you’ll have one of the best pumpkin cupcakes you’ve ever had.
